I think the conclusion is:
To be more precise: each headrest has two plastic elements located at the seat. You have to look at the one that looks as there is nothing to press, but indeed there is a place you should use a coin or a key to press, then pull up this side and only then press the plastic on the 2nd side
That shows an older model, but a similar action may work.
I am guessing that, because if you go here and look at the schematic, you see the notches at the bottom of the headrest stalks, implying that similar latches must exist inside the seat.
