What are you all using to mount your cellphones in a convenient place? I definitely do not want to put this on my windshield. One of the potential solutions I saw was a mount that goes on the top of the center display but it looks like the phone will stick out from the dashboard too far and that it might also block the display.

You might look at Ram Mounts. I have had good luck with both iPhone and iPad mounts in my truck. They typically recommend selecting one of four separate locations. The cup holder location might work for you.

Dunno about where you live, but in my part of the world just touching it is called distracted driving - $500 plus points first time and $1000 plus more points the second. Your phone works hands free with Google voice control and you have Google maps. I just leave mine on the charging pad. Get into an accident and you’ve been texting, the first thing the cops look at is your phone. You might demand a search warrant, but your insurance doesn’t care about the niceties and paying to fix your EV? Not sure I’d want to go there…

It has a double mount option. One is a permanent stick pad that you stick on the dashboard, and then you use the succion mount to fix to that. I had it in my previous car, but it's a bitch to unstick when you sell or return the car to the dealer after the lease.
So now I only use the succion mount on the dashboard. It's a soft, sligthly adherent, rubbery material. So it combines the natural adhesion of the material to the succion... I do have to re-stick it once every couple of weeks. But you get an advance warning... the phone mount gets wobbly before it gets a chance to completely fall on your legs. So you can reset the succion before it actually falls. I've never had it completely detach and fall. Works pretty well. Adjustable. Has a place where the charging cable fits and all.
